The smoker balances the delicate seasoning of white oak wood from a closely watched fire in Pungo, Va. A 16 hour in-one job-delivering the most well-crafted beef, pork and poultry to the mouths of a hundred mile radius from the center of this small wood fire in the back country of coastal Virginia.

Like any other afternoon, Pittmaster Mike Heckman slaves away on a gross eight hours of sleep for the week checking the temperature on his 500 gallon hand-built smoker, shouting “Yehaaaw! We’re in range, let’s get the turkey on soon!” He’s amped and preparing for 412Q’s next gig, a surprise party of 35 at a local brewery.

Un-phased, he admires his clean-burning fire in signature. Everything this man touches is signature for that matter–no side dish is just that, but instead, a pairing of genius not second to his impeccable barbecuing skills. Focusing on simplicity, he lets the taste of his perfectly smoked meats speak for themselves, and for his sides, just the same. Carrying every detail with careful consideration to perfect this next party, 45 minutes away–allowing that traffic abides.

“So we have to be set up by 8 which really means 7:30. That means we have to leave here by 6:15.” I check my phone for the time, “it’s 4:30 now, do ya think we’ll make it on schedule?” I chime back. Checking his list in his head he nods, “Oh yeah!” rocking back in his chair to cross his legs.

Mike is cutting it down to the wire—but, it’s how he planned it. He wants the meat to be as pure as possible before it’s enjoyed by his loyal patrons.
